You're My Sweetheart Cake

A super EASY heart-shaped cake from my book Easy Cut-Up Cakes for Kids. Try making it for your KIDDOS for Valentine's Day, or make it a family activity and bake and decorate it together.

You're My Sweetheart Cake
1 strawberry cake mix
Pink frosting
1 large tube white frosting (or homemade)
Pastel candies, such as M&Ms, Skittles, jelly beans, or gum drops

1. Make cake according to package directions. Bake cake as directed on box for two pans, using one 8-inch round pan and one 8-inch square pan. Cool cakes in pans for 10 minutes, and then invert and cool completely on a wire rack.
2. Place the square cake diagonally on a platter or foil-wrapped board. Cut the round cake in half and the place the cut sides against the top two sides of the square cake to make a heart.
3. Frost entire cake pink. Outline top edge with white tube frosting (or homemade in a decorator's bag with a star tip). Decorate the cake with pastel candies of your choice. You can use the candies to create flowers as seen in the photo.

TIP: Switch up the color scheme if you don't want a pink cake! Use cherry chip cake mix, frost the cake white, and use red tube frosting and candies.

Chicken Roll-Ups (or Bundles, or Pockets!)

This EASY recipe is so versatile and can be made in so many different ways. I first started making these little BEAUTIES with the crescent roll dough from a can. I've moved on to pre-made PIE CRUST, which I think tastes much better!





Chicken Roll-Ups (or Bundles, or Pockets!)
2 cups cooked and shredded or diced chicken (rotisserie chicken works great!)
1/2 package (4 ounces) cream cheese, softened
1/2-3/4 cup chopped nuts
1/2 green, red, or yellow bell pepper, chopped or diced
Salt and pepper, to taste
Montreal Chicken seasoning (optional)
1 pre-made refrigerator pie crust

Mix together the chicken, cream cheese, nuts, and bell pepper. Season with salt and pepper, and/or chicken seasoning, if desired.

Roll out the pie crust just so it's a little bit thinner than what's in the package. Cut out long rectangles to make roll ups or pockets, or circles to make bundles. Place a tablespoon or two of the chicken mixture on one end of the rectangle and roll up, or place in the middle of the rectangle and fold dough over top to make a pocket. (Then press with a fork around the edges to make it pretty!). Or place filling in the middle of a circle of dough and pull dough up around filling to make a bundle (my husband's favorite version).

Bake at 450 degrees for about 15 minutes, or until the crust is nicely browned and you can hear your little creations starting to sizzle. Serve with a nice green salad! Makes around 6 servings, or more depending on how thin you roll out the dough.

TIP: Change things up a bit and just use the chicken and cream cheese as a base. Throw in some celery and craisins instead of the bell peppers, or stir in some salsa and black beans. The possibilities are endless, and everything seems to taste good mixed with cream cheese and wrapped up in pie crust! :)

Lemon Garlic Chicken

My mom treats my little family to this TASTY meal quite often. We always gobble it up and try to SNEAK leftovers home with us (if there is any!). The best thing about this is that my mom got it from Weight Watchers, so it's actually HEALTHY too! She's adjusted it over the years I'm sure, but it's pretty BASIC and, of course, easy.

Lemon Garlic Chicken
1-1/2 pounds boneless, skinless chicken breast, cubed (about 1-inch cubes)
2 cloves garlic, minced
1 tablespoon olive oil
1 (14-ounce) can low-sodium chicken broth
1 tablespoon cornstarch
1/4 cup lemon juice
1 tablespoon dried parsley

Put oil in a large frying pan. Add chicken and garlic and saute until chicken is done. Mix the chicken broth with the cornstarch; add lemon juice. Add broth mixture to chicken in pan and heat to boiling. Stir constantly until sauce thickens. Stir in parsley and serve over brown or white rice. Add salt and pepper to taste. Makes 4–6 servings.

TIP: Try adding fresh parsley instead of dried if you have it!

Chocolate Football Cake

Wow! Can you believe the SUPER BOWL is just around the corner? I posted a bunch of APPETIZERS throughout the month of December, plus a few more thrown in for good measure in January, so check those out for your Super Bowl PARTY. However, this cute cut-up cake is always a hit at any FOOTBALL party. It's from my Easy Cut-Up Cakes for Kids book and, of course, is super easy to make!

Football Cake
1 chocolate cake mix
Chocolate frosting
1 large tube white frosting

1. Make cake mix according to package directions. Bake cake as directed on box for a 9 x 13-inch pan. Cool cake in pan for 10 minutes, and invert and cool completely on a wire rack.
2. Cut the cake according to the diagram below and throw away or eat the unused pieces.
3. Frost the entire cake with chocolate frosting. Using the white tube frosting or a decorator's bag, draw a white line in the center of the football and then the smaller white lines across it to look like the football laces.
4. On each end of the football, draw curved white lines for the football's stripes.

TIP: Using 1 to 2 large tubes of green frosting, create grass around the football by putting the end of tube right up against the bottom of the football and pulling out while pressing on the tube.

Carolyn's Taco Soup

I've had a LOT of taco soups, and this one is definitely my FAVORITE. It uses taco sauce instead of taco seasoning, and I think that's what makes this taste EXTRA good. Thanks to Carolyn for sharing—I hope you don't mind my additions!



Carolyn's Taco Soup
1 pound ground beef
1 can red kidney beans, rinsed and drained
1 can black beans, rinsed and drained
1 cup frozen corn, thawed
1 can stewed tomatoes, pureed with liquid
1/2 bottle taco sauce
1 (4-ounce) can diced green chiles
2 tablespoons chili powder
Dash of garlic salt and onion salt
2–4 cups beef broth (or more if desired)

Brown and drain the ground beef. Combine all ingredients in a large soup pot and simmer for at least 10 minutes. Serve with sour cream, cheese, and taco chips.

TIP: You can use any kind of chip you like, but my favorite happens to be Fritos. Other options include regular tortilla chips, or Nacho Doritos are even pretty tasty.

Healthy (and Easy!) Taco Pasta Salad

This recipe is so EASY, and it is really pretty HEALTHY. I actually never measure anything, but the amounts I've included below are a good start—you can add MORE of whatever ingredient you want if you think it needs it!

Healthy (and Easy!) Taco Pasta Salad
8 ounces rotini pasta, cooked according to package directions
1/2 pound ground turkey or extra lean ground beef
1/4 onion, diced (optional)
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/2 cup salsa
1/2 cup light or fat-free sour cream
1 cup grated cheddar cheese (if you use the light or fat-free version, this will obviously be even healthier)

While the pasta is cooking, brown the meat in a large frying pan. When almost done, throw in the onion and bell pepper; cook until tender. Add the cooked pasta. Stir in the salsa and sour cream until completely coated. Add more of one or both ingredients if mixture seems dry. Stir in half of the cheese until melted. Sprinkle remaining cheese over individual servings. Makes 4 servings.

TIP: Another good addition to this salad would be a can of rinsed and drained black beans. Some corn would be really good as well. The great thing about this salad is that it is so versatile!

Turkey Burgers with Black Bean, Corn, and Red Pepper Relish

I can hardly WAIT for dinner to be ready every time I make this. It is such an EASY meal and so fantastic, I want it ALL the time. Even better is that it ends up being a fairly healthy dish! I guess you could call these mouthwatering burgers my GO-TO dinner. I don't have exact measurements for the relish, but I don't think it's really necessary. I usually just try and use equal parts of each. Ask me if you want estimates though!



Turkey Burgers with Black Bean, Corn, and Red Pepper Relish
Frozen premade turkey burger patties (I usually buy these from Costco, but the pic above is a homemade recipe of mine! I'll post it soon.)
Some chopped red bell pepper
Some black beans, rinsed and drained
Some frozen super sweet white corn
Condiments of choice (usually just ketchup and mustard for me)
Whole wheat hamburger buns

Cook the burgers according to package directions. We usually do them outside on the BBQ or inside on a grill pan or our George Foreman Grill. It tastes great any of these ways.

In a frying pan prepared with nonstick spray or a touch of extra virgin olive oil, saute the bell pepper for a couple of minutes and then add the black beans and corn. Cook until beans and corn are warmed through. Dress the bun with your condiments of choice and then plop your burger on the bottom. Scoop a LARGE spoonful of the relish over the burger and then top with the top half of the bun.

TIP: Although this makes it slightly less healthy, before putting your burger on your bun, top it with relish and cover with a slice of pepper jack or mozzarella cheese (the lighter choice). Zap it in the microwave so the cheese is just melted and then put on your bun. The cheese holds all the yummy relish in place, making it less likely to fall out of your hamburger as you're eating it.

Yummy Granola

This is a recipe my MOM has made for years. The first time I made it for my HUSBAND, he basically downed the WHOLE batch. Now I always have to DOUBLE the recipe if I want some for myself!

Yummy Granola
6 tablespoons butter or margarine
1/2 cup honey
1/2 cup water
1/2 cup brown sugar
1 cup slivered or sliced almonds (I prefer slivered)
1/2 cup sunflower seeds
1/2 cup wheat germ
1/3 cup sesame seeds
6 cups oatmeal

In a saucepan, melt the butter and then add the honey, water, and sugar. Stir until all is melted and combined.

In a large mixing bowl, combine all dry ingredients. Pour wet ingredients over top and mix well. Spread on a baking sheet with sides and bake at 250 degrees for 60 minutes, stirring several times. Turn off oven and open door a crack, leaving granola inside to cool completely. Store in a large ziplock bag or Tupperware container. Eat with milk for breakfast, stirred in with your favorite yogurt, as a snack, or even sprinkled over ice cream!

TIP: You can also add any kind of dried fruit to the mix once it has completely cooled. I love craisins or dried raspberries. Fresh fruit added to individual servings is also yummy! OH, and try experimenting. You can add different types of nuts or basically anything else you want!

Fish Tacos with Lime Cilantro Sauce

This is a very REFRESHING dinner that I like to throw together during my healthy eating times. I love the FLAVORS of cilantro and lime—so tangy and powerful, and the PERFECT sauce for these excellent tacos.

Fish Tacos with Lime Cilantro Sauce
Lime Cilantro Sauce
1/2 cup chopped cilantro
1 green onion, thinly sliced
1/4 cup light or fat-free mayonnaise
1/4 cup light or fat-free sour cream
2 teaspoons lime zest
1 tablespoon lime juice
1 clove garlic, minced

Fish Tacos
1 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon ground red pepper
1/4 teaspoon salt
1/4 teaspoon garlic powder
1 1/2 pounds any white fish (halibut, mahi-mahi, tilapia, etc.)
Small flour tortillas (or corn tortillas if you prefer)

Preheat oven to 425 degrees.

To make the sauce, combine all the ingredients and then refrigerate until ready to use.

To make the tacos, combine all the seasonings and then coat your choice of fish. Bake for about 10-12 minutes, or until done (the fish will flake easily with a fork). When fish is done, break into pieces with a fork and then scoop in the center of your tortillas. Drizzle the sauce over top and serve. Makes about 4-6 servings.

TIP: To add some extra nutrients, top the fish with shredded cabbage or romaine lettuce and then drizzle with the sauce. You can also serve with lime wedges on the side so people can squeeze on extra juice.

Creamy Fruit Dip AND Caramel Fruit Dip

It's this time of year when my CRAVINGS hit hard for the really JUICY and sweet fruits of summer! Because those fruits are months away, I like to whip up these EASY dips for the sometimes dry WINTER fruits. Both are so easy and always good—and you're sure to get in at least one full SERVING of fruit when you eat it. Both recipes serve around 10–12 people and can be eaten with ANY fruit you feel like!

Creamy Fruit Dip1 package (8 ounces) cream cheese, room temp
3 tablespoons sugar
1 cup sour cream or Mascarpone cheese
1 teaspoon vanilla or almond extract

Combine all ingredients in a bowl and beat until smooth and creamy.


Caramel Fruit Dip
1 package (8 ounces) cream cheese, room temp
1/2 cup brown sugar
1/2 cup powdered sugar
1 teaspoon vanilla

Combine all ingredients in a bowl and beat until smooth and creamy. (This recipe was passed to me by my cousin and good friend, Julie. Thanks for sharing!)

Breakfast Burrito

My New Year's resolution every year is to eat HEALTHY and skip ALL treats for the month of January. I try to eat EXTRA good foods for me during this time so I can try and drop any extra pounds I may have gained while gorging over the holidays. This is a classic that can really be used for ANY meal of the day.

Breakfast Burrito
1-2 large eggs (see TIP)
2 teaspoons skim milk
Salt and pepper, to taste
1/4 cup reduced-fat or fat-free cheddar cheese
1-2 tablespoons chunky salsa
1 whole wheat tortilla

In a frying pan sprayed with nonstick spray, scramble the eggs with the milk, salt, and pepper. When the eggs are mostly cooked, stir in the cheese and salsa. When the cheese is melted and the salsa warmed through, scoop onto the tortilla, roll like a burrito, and serve!

TIP: If you want to be EXTRA healthy, just use 2 egg whites and toss the yolks in the trash. And, if you want to be less healthy, cook up a sausage link or two and slice. Then just throw the sausage in with the cheese and salsa. Bonus: You can buy turkey sausage links that are pretty low fat and that taste great!

Goat Cheese and Olive Tapenade

My KICK with appetizers is coming to an end, as is the holiday season. This extremely TASTY starter is from Lisa, a friend at work. The combination of FLAVORS is totally divine and always keeps me coming back for more.

Goat Cheese and Olive Tapenade3/4 cup black olives
3/4 cup green olives with pimientos
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 clove garlic, minced
8 ounces goat cheese, softened
1 baguette, thinly sliced

Place the olives, oil, vinegar, and garlic in a food processor and process until combined but still chunky. Spread 2 teaspoons goat cheese on each baguette slice. Top with 2 teaspoons olive tapenade. Serves around 6-8.

Italian Biscuit Bites

These bites are QUICK to throw together, especially if you realize at the last minute that you need an appetizer for the people that are coming over SOON. Feel free to experiment with different CHEESES, and don't worry if you need to skip out on the marinara sauce. These little babies stand on their own! Look for this recipe and many others in my upcoming book, 101 Things To Do With Cheese.

Italian Biscuit Bites
1 (16-ounce) tube jumbo buttermilk refrigerator biscuits
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon basil or oregano
5-6 tablespoons butter, melted
Marinara sauce, for dipping (optional)

Preheat oven to 400 degrees.

Cut each biscuit into fourths; set aside. Combine the cheese and seasonings; set aside. Dip each biscuit in the melted butter and then roll in the cheese mixture. Bake for 10-12 minutes on a baking sheet prepared with nonstick spray, or until golden brown. Serve warm with marinara sauce on the side. Makes 6-8 servings.

TIP: I often double the cheese mixture because I'm totally obsessed with cheese and want to make sure every last possible biscuit is completely coated with the stuff. Feel free to do the same!

Cheesy Bacon Fondue

While growing up, it was always a TRADITION to have fondue on Christmas Eve with my grandparents. As we all sat in a circle around the fondue pot, we'd take turns dipping big cubes of savory breads into the cheese. If somebody dropped a piece of bread in the pot, they'd have to KISS the person sitting to his or her left, or at least say something NICE about that person. It was a fun tradition, and one that makes my mouth WATER to this day. (P.S. This recipe also appears in my upcoming book, 101 Things To Do With Cheese!)

Cheesy Bacon Fondue
5 slices bacon, chopped
1 cup chopped onion
1 clove garlic, chopped
1 can (10.5 ounces) cream of mushroom soup, condensed
1 cup milk
5 cups grated sharp cheddar cheese
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard

Fry bacon until crisp. Add onion and garlic and saute until tender. Stir in condensed soup and milk and whisk until smooth. Add the cheese, Worcestershire sauce, and dry mustard. Blend thoroughly and keep warm in a fondue pot or slow cooker. Serve with French bread cubes. Makes 12 to 14 servings.
TIP: Try substituting different cheeses for a whole new range of flavors!

Sharon's Killer Cheeseball

A friend in my old neighborhood always delivered cheeseballs and crackers as her Christmas gifts to everyone. We always looked forward to this NUMMY snack and downed it pretty fast once it arrived on our doorstep. Hopefully you enjoy it as much as my family!

Sharon's Killer Cheeseball
1 bundle green onions (about 6-8)
2 packages Budding Beef or Ham lunchmeat
2 (8-ounce) packages cream cheese, room temp
2 tablespoons mayonnaise
Dash of Worcestershire sauce
Dash of garlic salt
Chopped pecans or walnuts

Chop the onions and meat, and then stir all ingredients except the nuts together. Form 2 balls and then roll in the nuts. Serve with your favorite crackers!

TIP: Try using Budding Pastrami for a little different taste. You can even roll the cheeseballs in more chopped lunchmeat if you'd rather skip the nuts.

Sweet and Sour Meatballs

This time of year is usually full of parties and fun holiday get togethers. One of the best things about those parties are the YUMMY appetizers! Last week I posted my husband's favorite appetizer, and, over the next couple of weeks, I'll be posting my favorites. You'll be able to serve them at ANY party, and, of course, they will all be SUPER EASY to make! This week's recipe is from Natalie, a friend of mine. She brought these little beauties to just about every potluck lunch we had at work.

Sweet and Sour Meatballs
1 pound ground beef or turkey
3/4 cup breadcrumbs (or rolled oats)
2 eggs, slightly beaten
1/2 cup chopped onion
1 teaspoon Worcestershire sauce
1/4 cup milk
1 teaspoon salt

Sauce
1/2 cup brown sugar
1/4 cup vinegar
1 teaspoon mustard
1 teaspoon Worcestershire sauce
1/4 BBQ sauce (any kind will work)

Preheat oven to 350 degrees.

Mix together all the meatball ingredients. Form into 1-inch balls and place in an 8 x 8-inch baking pan.

Mix sauce ingredients and pour over meatballs. Bake for about 30 minutes, or until done.

TIP: These little meatballs go pretty fast, so doubling the recipe is definitely something you should consider! If you do make double, just bake it all in a 9 x 13-inch pan instead. And, if you want to keep the meatballs warm throughout your party, pour them into a crockpot and leave them on warm. Also good over rice for a yummy dinner!

Christmas Tree Cake

This super cute cake can be found in my book, Easy Christmas Cut-Up Cakes for Kids. It really is very easy to make and just may be a new tradition you'll want to start with your family. And, it will definitely be a hit at your holiday party this year!

Christmas Tree Cake
1 chocolate cake mix
Green frosting
1 King-Size Snickers or Milky Way bar
White frosting
Red candies, like M&Ms, striped peppermints, Red Hots, etc.

Make cake mix according to package directions. Bake cake as directed on box for a 9 x 13-inch pan. Cook cake in pan for 10 minutes, and then invert and cool completely on a wire rack.

Cut the cake according to the diagram. Position the two smaller triangle pieces together to create one large triangle and then frost the top green. Place the other large triangle on top and frost the entire cake green. Cut candy bar in half and then stack on top of each other. Place candy bar at the bottom center of your tree to make the trunk.

Using a decorator's bag with a star tip, frost a white garland diagonally across the tree as shown in the photo. Decorate the tree with candy as desired. Serves about 8 to 10.

TIP: For a different taste, frost the tree with green mint frosting and decorate with mint-flavored M&Ms. For a different look, sprinkle on shredded coconut that has been tinted green to look like real pine needles.

Sweet Fiesta Salad

This salad is SO good! This can be found in my book, 101 Things To Do With Salad. It's another easy recipe that you may already have all the ingredients for in your pantry (minus the lettuce of course!). Hope you like it as much as my family does!


Sweet Fiesta Salad
1 large head romaine lettuce, washed and torn into bite-size pieces
1 (15-ounce) can red kidney beans, rinsed and drained
1 (15-ounce) can black beans, rinsed and drained
1/2 red onion, thinly sliced or chopped
2 cups grated sharp cheddar cheese
1 (10-ounce) bag Fritos
1 (16-ounce) bottle Catalina dressing (light or fat-free work fine and taste just as good as reg.)

In a large bowl, combine all ingredients except chips and dressing. When ready to serve, sprinkle the chips over top. Gradually add dressing over top and toss. (You may not need all the dressing.) Serve immediately. Makes around 10-12 servings as a side dish, fewer if using as your main course.

TIP: If you want to make this into a more substantial meal, stir in some cooked taco meat, diced tomatoes, and sliced olives. It'll be delicious! And, if you don't have Fritos, try substituting other types of chips such as Nacho Doritos or regular tortilla chips. All seem to taste pretty good to me!

Pumpkin Chocolate Chip Pancakes

I found a PUMPKIN pancake recipe on allrecipes.com a couple years ago, but decided to make a few adjustments. My favorite addition—CHOCOLATE chips. This is such a yummy breakfast, and PERFECT if you have some extra pumpkin handy.



Pumpkin Chocolate Chip Pancakes
2 cups flour
4–5 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1-1/2 cups milk
1 cup pumpkin
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar
Semisweet chocolate chips

In a bowl, combine all ingredients except chocolate chips. Heat a large frying pan, griddle, or electric skillet and prepare with nonstick spray. Using a 1/4-cup measuring cup, scoop batter onto heated pan. Sprinkle chocolate chips over batter and slightly press with fingertips. Flip when bottom side is browned and then brown other side. Serve warm with butter and homemade maple syrup. Makes around 18 small pancakes.

TIP: The semisweet chips taste great in this recipe, but feel free to use milk chocolate if you prefer. Also, try adding some chopped nuts or serving with chocolate whipped cream!

Pretty Pomegranate Salad

This recipe is from my book, 101 Things To Do With Gelatin. I think it's pretty tasty, and not your usual Jell-O salad. Since pomegranate is now in season, this just might be THE perfect dish to take to one of your holiday get togethers. I promise you'll get compliments!

Pomegranate Salad
1 large box cherry or black cherry gelatin
2 cups boiling water
2 cups cold pomegranate juice (100% juice)
1 (8-ounce) container Cool Whip, thawed
1/2 cup sliced almonds or chopped walnuts (I prefer the walnuts)
1/2 to 1 cup fresh pomegranate seeds

Dissolve gelatin in boiling water. Add cold pomegranate juice. Pour into a 9 x 13-inch baking pan and chill until set, about 3-4 hours. Spread Cool Whip over top and then sprinkle with nuts and pomegranate seeds. Makes around 12 servings.

TIP: If pomegranate isn't in season, just skip the seeds sprinkled over top. It'll still taste great without them.
